I've often wondered why they don't let you easily change the photos used in the icons for Preview, iPhoto, and Mail.
You could do it in Photoshop, of course, but it'd be nice if they'd do it for you. Apple probably considered it, but felt it was more important to have immediately recognizable icons across all Mac users.
